If that is anatomically similar to the Northern Pike in North America (and they look so similar it must be), then I disagree. He has left an entire series of bones right in the centre of the filet.

Most fish have those bones, but they are too small to matter typically. In a Northern, they really do need to be cut out.

You don't need to fillet a fish at all. I've oven baked a whole Northern and it's been okay. But if we are talking about "the best way to filet a pike", I think I would default to one of the many techniques that involve removing all of the bones.

How did you deal with all the tiny bones if you baked the whole thing?

When you bake a fish you can often sort of lift the meat off the bones. It gets pretty flaky.

I catch small trout all the time and I've never left in the Y bone. It's so god damn easy to take it out.

TLDW; Cut through the Y-bone and call it good.... apparently.... I don't speak German.
